Dona Elena Recipes To Try This Christmas

I am a big fan of salads and pastas and my definition of a great, delicious feast include these 2 lovely dishes. Let me share these 2 new recipes from our friends from Dona Elena which you might find interesting to prepare for your family come Christmas. I have sampled them during the Dona Elena Cuisinera Club Holiday Special and I assure that they are simply scrumptious.

1. Salmon Caesar Salad

Here are the ingredients:

  • 1 medium-sized lettuce, chopped
  • 3 tablespoons lemon juice
  • 2 pieces large egg yolks
  • 6 pieces Dona Elena Flat Fillet Anchovies, mashed
  • 3 pieces garlic cloves, minced
  • 1/2 teaspoon Worcestershire sauce
  • 10 tablespoons Dona Elena Pure Olive Oil
  • 3/4 cups Parmesan cheese
  • 1/4 kilogram salmon fillet
  • 1 cup croutons
  • salt and freshly-ground pepper to taste

Here is how to prepare this dish:

  1. Whisk lemon juice and garlic
  2. Whisk in egg yolks, anchovies, and Worcestershire sauce
  3. Drizzle in the olive oil in a slow and steady stream while whisking. Continue until dressing is thick.
  4. Mix in the Parmesan cheese. Season with salt and pepper to taste.
  5. For the salmon, heat some olive oil in a frying pan
  6. Saute the salmon fillet, breaking into flakes while cooking. Season with salt and pepper and cook until salmon flakes become a bit toasted but not burnt.
  7. Remove from heat
  8. Toss the chopped lettuce with the dressing. Top with toasted salmon, capers, and croutons.

Recipe For Sauteed Vegetables

I simply love veggies and I do aspire for my little man to share the same passion for eating anything that is healthy and good. Apparently, I have to probably wait a few more years before he finally discover his love for eating greens as he is enamored with only the stuff that appeals to his palate at the moment. Nevertheless, I do make it a point to cook vegetables often and would serve it to him. This dish is one of those recipes I’ve stumbled online the same time I found a Citizen watch here and while I was on my quest to find dishes that would appeal to my little one. It was shared by one of my mommy blogger friends, but the links and the details have escaped me now.

Anyway, I love that it has a number of my fave veggies in it, including the little man’s fave chayote, which is not only a good source of anti-oxidants that fight free radicals, helping the body combat diseases like cancer, as well as aging, but also a good source of potassium, Vitamin C, Riboflavin, to name a few. This dish is pretty easy to cook and even kitchen-challenged mums like me can cook it without breaking a sweat!

Here are the recipe for Sauteed Vegetables:

  • 2 medium-sized Chayote, sliced to thin strips
  • 1 big carrot, sliced to thin strips
  • 1 pack of Baguio Beans, sliced to bite sizes
  • 1 can of whole Corn kernels
  • cloves of garlic
  • 1 medium-sized onion
  • butter {for sauteing}
  • salt and pepper

How to cook:

  • Heat up your non-stick pan, add butter and saute onion and garlic
  • Add in the veggies
  • Add in the corn last
  • Simmer until the veggies are right to the bite {tender but still crunchy, that is!}
  • Add a dash of salt and pepper to taste

** You can simply play with the amount of your veggies depending on how much you want to cook and how many people you are cooking for. I am not also particular with the measurements for spices and butter, as I simply adjust it whenever I deem it necessary.

This dish is a perfect side dish for porkchop, fried fish or other meat viands, or since the Lenten Season is fast approaching and most people are steering clear of meat, you can simply serve it with steaming bowl of rice for lunch or dinner!
